Finally we have three DOC wines of the Macerata area: Esino which is white and red and it is agreeable to drink young, Verdicchio di Matelica which is produced in a very particular area of the Marches, an ex salt basin near Apennine Mountains; and white Colli Maceratesi, with fresh and delicate fragrances, which is perfect together with the most famous salami of this area, called "ciauscolo". Vernaccia di Serrapetrona, a DOCG, ends this series of wines: a natural red sparkling wine which is unique and heady which is born from the ancient vineyard of black Vernaccia (85%) and from a particular process of three fermentations. |
